  1. 1. Cut the nori seaweed sheets into strips about 1 centimeter wide.
  2. 2. Heat oil in a wok or a large frying pan until it is hot.
  3. 3. Fry the nori strips in the hot oil until they are crispy.
  4. 4. Place the fried nori strips on kitchen paper to absorb excess oil.
  5. 5. Cook the soba noodles according to the instructions on the package.
  6. 6. Place some wasabi paste into small dipping bowls.
  7. 7. Pour 3 to 4 tablespoons of soy sauce over the wasabi in each bowl.
  8. 8. Peel the ginger and slice it into very thin pieces.
  9. 9. Rinse the Thai basil and shake it dry.
  10. 10. Pluck the basil leaves from the stems and chop them roughly.
  11. 11. Sprinkle the sliced ginger and chopped basil into the soy sauce.
  12. 12. Whisk together sesame oil, rice wine, and 2 to 3 tablespoons of soy sauce in a bowl.
  13. 13. Pour the oil sauce over the drained noodles and toss them well to coat.
  14. 14. Divide the noodles among individual serving bowls.
  15. 15. Garnish the noodles with the crispy nori strips.
  16. 16. Serve the noodles alongside the small bowls of soy sauce dip.
