🍽️ Crispy Nori Napkins with Soy Sauce Dip

Ingredients
- 2 roasted nori sheets
- peanut oil (for frying)
- 500 g soba noodles
- 4 tsp wasabi paste
- 250 ml soy sauce
- 2 cm ginger
- 1 handful Thai basil
- 2 tbsp sesame oil
- 2 tbsp rice wine
Instructions
- 1. Cut the nori seaweed sheets into strips about 1 centimeter wide.
- 2. Heat oil in a wok or a large frying pan until it is hot.
- 3. Fry the nori strips in the hot oil until they are crispy.
- 4. Place the fried nori strips on kitchen paper to absorb excess oil.
- 5. Cook the soba noodles according to the instructions on the package.
- 6. Place some wasabi paste into small dipping bowls.
- 7. Pour 3 to 4 tablespoons of soy sauce over the wasabi in each bowl.
- 8. Peel the ginger and slice it into very thin pieces.
- 9. Rinse the Thai basil and shake it dry.
- 10. Pluck the basil leaves from the stems and chop them roughly.
- 11. Sprinkle the sliced ginger and chopped basil into the soy sauce.
- 12. Whisk together sesame oil, rice wine, and 2 to 3 tablespoons of soy sauce in a bowl.
- 13. Pour the oil sauce over the drained noodles and toss them well to coat.
- 14. Divide the noodles among individual serving bowls.
- 15. Garnish the noodles with the crispy nori strips.
- 16. Serve the noodles alongside the small bowls of soy sauce dip.
