  1. 1. Wash the zucchini, cut it lengthwise into quarters and then into slices. Wash the spinach, shake it dry and spin it in a salad spinner. Peel the shallots, halve them and slice them thinly. Peel the garlic and ginger and chop them finely.
  2. 2. Heat the oil in a pan. Add the shallots, garlic and ginger and sauté them over medium heat for about 2 minutes. Add the zucchini and sauté for about 5 minutes. Then add the spinach and let it wilt.
  3. 3. Now add the prawns, coconut milk and broth and simmer the mixture covered over low heat for about 5 minutes, stirring occasionally.
  4. 4. Meanwhile, cook the soba noodles in plenty of salted water according to package instructions until al dente. Drain them in a sieve and let them drain.
  5. 5. Season the sauce with fish sauce, lemon juice, salt, pepper and cayenne pepper. Mix the noodles into the sauce. Wash the coriander, shake it dry and pick off the leaves. Place the noodles on plates and serve them sprinkled with coriander.
