🍽️ Soba noodles with carrots and peanuts

Ingredients
- 400 g Soba noodles
- salt
- 500 g carrots
- 1 bunch cilantro
- 1.5 cm fresh ginger
- 100 g salted peanuts
- light soy sauce
- 0.5 tsp chili flakes
- lime juice
- 1 untreated lime (cut into wedges)
Instructions
- 1. Bring water to a boil and add some salt.
- 2. Cook the soba noodles in the salted water until they are al dente.
- 3. Peel the carrots in the meantime.
- 4. Cut the carrots into thin sticks.
- 5. Rinse the coriander under running water.
- 6. Shake the coriander dry.
- 7. Chop the coriander leaves roughly.
- 8. Peel the ginger.
- 9. Grate the ginger finely.
- 10. Heat a wok without oil.
- 11. Roast the peanuts in the hot wok until golden brown.
- 12. Remove the peanuts from the wok.
- 13. Chop the peanuts roughly.
- 14. Add oil to the wok.
- 15. Heat the oil in the wok.
- 16. Add the grated ginger to the wok.
- 17. Add the carrot sticks to the wok.
- 18. Sauté the ginger and carrots lightly.
- 19. Drain the noodles.
- 20. Let the noodles drain.
- 21. Add the noodles to the vegetables in the wok.
- 22. Add the chopped coriander.
- 23. Add the chopped peanuts.
- 24. Toss everything well.
- 25. Season with soy sauce.
- 26. Season with chili flakes.
- 27. Season with lime juice.
- 28. Warm the plates.
- 29. Portion the dish onto the plates.
- 30. Add a lime wedge as a garnish.
- 31. Serve the dish.
