  1. 1. Roast the peanuts in a hot pan without oil over medium heat for 3 minutes.
  2. 2. Let the peanuts cool down afterwards.
  3. 3. Chop the cooled peanuts coarsely.
  4. 4. Clean and wash the broccolini.
  5. 5. Cook the broccolini for 3 minutes in boiling salted water.
  6. 6. Shock the broccolini immediately in cold water.
  7. 7. Let the broccolini drain.
  8. 8. Cook the edamame for 1 minute in boiling salted water.
  9. 9. Shock the edamame in cold water.
  10. 10. Peel the edamame.
  11. 11. Wash the spring onions.
  12. 12. Cut the spring onions diagonally into rings.
  13. 13. Wash the coriander.
  14. 14. Shake the coriander dry.
  15. 15. Chop the coriander leaves coarsely.
  16. 16. Cook the noodles according to package instructions in plenty of boiling salted water until al dente.
  17. 17. Peel the garlic.
  18. 18. Peel the ginger.
  19. 19. Chop the garlic finely.
  20. 20. Chop the ginger finely.
  21. 21. Squeeze the juice from 1 lime.
  22. 22. Drain the noodles.
  23. 23. Reserve some cooking water.
  24. 24. Let the noodles drain.
  25. 25. Mix the noodles with 1 tbsp sesame oil.
  26. 26. Put peanut butter in a bowl.
  27. 27. Put soy sauce in the bowl.
  28. 28. Put rice vinegar in the bowl.
  29. 29. Put the chopped garlic in the bowl.
  30. 30. Put the chopped ginger in the bowl.
  31. 31. Stir the sauce smooth with some noodle cooking water.
  32. 32. Season the sauce with salt.
  33. 33. Season the sauce with pepper.
  34. 34. Season the sauce with the lime juice.
  35. 35. Heat the remaining sesame oil in a wok or large pan.
  36. 36. Toss the soba noodles with broccolini, edamame, spring onions and sauce in it over medium heat for 5 minutes.
  37. 37. Taste everything.
  38. 38. Divide the food onto plates.
  39. 39. Sprinkle the food with chopped peanuts.
  40. 40. Sprinkle the food with coriander leaves.
  41. 41. Wash the remaining lime.
  42. 42. Cut the lime into wedges.
