🍝 Soba noodles with broccoli, edamame and peanuts

Ingredients
- 60 g Peanuts
- 300 g Broccolini (or broccoli florets)
- Salt
- 150 g frozen edamame (thawed)
- 4 Spring onions
- 1 Handful Cilantro
- 300 g Soba noodles (buckwheat noodles)
- 1 Garlic clove
- 10 g Ginger (1 piece of ginger)
- 2 Limes
- 2 tbsp Sesame oil
- 45 g Peanut butter (3 tbsp peanut butter)
- 3 tsp Soy sauce
- 3 tsp Rice vinegar
- Pepper
Instructions
- 1. Roast the peanuts in a hot pan without oil over medium heat for 3 minutes.
- 2. Let the peanuts cool down afterwards.
- 3. Chop the cooled peanuts coarsely.
- 4. Clean and wash the broccolini.
- 5. Cook the broccolini for 3 minutes in boiling salted water.
- 6. Shock the broccolini immediately in cold water.
- 7. Let the broccolini drain.
- 8. Cook the edamame for 1 minute in boiling salted water.
- 9. Shock the edamame in cold water.
- 10. Peel the edamame.
- 11. Wash the spring onions.
- 12. Cut the spring onions diagonally into rings.
- 13. Wash the coriander.
- 14. Shake the coriander dry.
- 15. Chop the coriander leaves coarsely.
- 16. Cook the noodles according to package instructions in plenty of boiling salted water until al dente.
- 17. Peel the garlic.
- 18. Peel the ginger.
- 19. Chop the garlic finely.
- 20. Chop the ginger finely.
- 21. Squeeze the juice from 1 lime.
- 22. Drain the noodles.
- 23. Reserve some cooking water.
- 24. Let the noodles drain.
- 25. Mix the noodles with 1 tbsp sesame oil.
- 26. Put peanut butter in a bowl.
- 27. Put soy sauce in the bowl.
- 28. Put rice vinegar in the bowl.
- 29. Put the chopped garlic in the bowl.
- 30. Put the chopped ginger in the bowl.
- 31. Stir the sauce smooth with some noodle cooking water.
- 32. Season the sauce with salt.
- 33. Season the sauce with pepper.
- 34. Season the sauce with the lime juice.
- 35. Heat the remaining sesame oil in a wok or large pan.
- 36. Toss the soba noodles with broccolini, edamame, spring onions and sauce in it over medium heat for 5 minutes.
- 37. Taste everything.
- 38. Divide the food onto plates.
- 39. Sprinkle the food with chopped peanuts.
- 40. Sprinkle the food with coriander leaves.
- 41. Wash the remaining lime.
- 42. Cut the lime into wedges.
- 43. Serve the lime wedges with the soba noodles with broccoli, edamame and peanuts.
