  1. 1. Wash the leek thoroughly and slice it into thin rings.
  2. 2. Peel the zucchini and cut it into long, noodle-like strips using a spiralizer or a vegetable peeler.
  3. 3. Remove the kale leaves from the tough stems.
  4. 4. Wash the kale leaves.
  5. 5. Boil the kale leaves in salted boiling water for 3 minutes.
  6. 6. Immediately shock the vegetables with cold water.
  7. 7. Let the vegetables drain well.
  8. 8. Peel the garlic.
  9. 9. Slice the garlic thinly.
  10. 10. Roughly chop the almonds.
  11. 11. Cook the soba noodles in plenty of salted boiling water according to the package instructions until al dente.
  12. 12. Drain the noodles.
  13. 13. Let the noodles drip dry.
  14. 14. Heat butter and oil in a large pan.
  15. 15. Sauté the garlic and almonds in it for 3 minutes over medium heat until golden yellow.
