🥗 Warm Soba Noodle Salad with Kale

Ingredients
- 1 stalk leek
- 400 g zucchini
- 100 g tender kale leaves
- salt
- 2 garlic cloves
- 2 tbsp almond kernels
- 250 g soba noodles (buckwheat noodles)
- 30 g butter (2 tbsp)
- 1 tbsp olive oil
- 2 tbsp soy sauce
- pepper
- 1 tbsp lemon juice
- 30 g sunflower seeds (2 tbsp)
- 30 g pumpkin seeds (2 tbsp)
- 30 g pine nuts (2 tbsp)
Instructions
- 1. Wash the leek thoroughly and slice it into thin rings.
- 2. Peel the zucchini and cut it into long, noodle-like strips using a spiralizer or a vegetable peeler.
- 3. Remove the kale leaves from the tough stems.
- 4. Wash the kale leaves.
- 5. Boil the kale leaves in salted boiling water for 3 minutes.
- 6. Immediately shock the vegetables with cold water.
- 7. Let the vegetables drain well.
- 8. Peel the garlic.
- 9. Slice the garlic thinly.
- 10. Roughly chop the almonds.
- 11. Cook the soba noodles in plenty of salted boiling water according to the package instructions until al dente.
- 12. Drain the noodles.
- 13. Let the noodles drip dry.
- 14. Heat butter and oil in a large pan.
- 15. Sauté the garlic and almonds in it for 3 minutes over medium heat until golden yellow.
- 16. Be careful not to let the garlic burn.
- 17. Remove the garlic and almond mixture from the pan.
- 18. Set the mixture aside.
- 19. Cook the leek in the remaining hot fat in the pan for 3 minutes over medium heat.
- 20. Add the zucchini noodles.
- 21. Cook the zucchini noodles for 2 minutes while turning.
- 22. Stir in the kale.
- 23. Cook everything for another 3 minutes while stirring.
- 24. Add the soba noodles.
- 25. Add the almonds.
- 26. Add the garlic.
- 27. Add the soy sauce.
- 28. Mix everything well.
- 29. Season with salt.
- 30. Season with pepper.
- 31. Season with lemon juice.
- 32. Divide the warm noodle salad onto plates.
- 33. Sprinkle the salad with sunflower seeds.
- 34. Sprinkle the salad with pumpkin seeds.
- 35. Sprinkle the salad with pine nuts.
