  1. 1. Wash the cucumber thoroughly under running water.
  2. 2. Cut off the hard ends of the cucumber.
  3. 3. Use a vegetable peeler to cut four long, thin slices from the cucumber.
  4. 4. Peel the rest of the cucumber completely.
  5. 5. Cut the peeled cucumber flesh into small cubes.
  6. 6. Place the cucumber cubes in the freezer and freeze them for 30 minutes.
  7. 7. Thread the four cucumber strips onto wooden skewers in a wavy pattern.
  8. 8. Wash the arugula (a leafy green vegetable) under cold water.
  9. 9. Remove tough stems or wilted leaves from the arugula.
  10. 10. Dry the arugula in a salad spinner or with a kitchen towel.
  11. 11. Roughly chop the arugula with a knife.
  12. 12. Add the chopped arugula, frozen cucumber cubes, yogurt, a splash of kefir (a fermented milk drink), and lemon juice to the blender.
  13. 13. Blend the ingredients in the blender until they are fine and smooth.
  14. 14. Pour the remaining kefir slowly into the running blender.
  15. 15. Blend further until the smoothie has a thick, creamy consistency.
  16. 16. Season the smoothie to taste with salt and pepper.
  17. 17. Divide the smoothie evenly among four glasses.
  18. 18. Place the cucumber skewers on the glasses as decoration.
  19. 19. Serve the smoothie immediately while fresh.
