🍽️ Smashed Brussels Sprouts

Ingredients
- 500 g Brussels sprouts
- 2 sprigs thyme
- 2 sprigs oregano
- 3 tbsp olive oil
- 1 tsp sweet paprika powder
- salt
- pepper
- 60 g Parmesan
- 0.5 bunch parsley (10 g)
- 0.5 bunch cilantro (10 g)
- 1 clove garlic
- 250 g yogurt (3.5% fat)
- 3 tbsp lemon juice
Instructions
- 1. Wash the Brussels sprouts thoroughly, remove the outer leaves, and trim them.
- 2. Place the Brussels sprouts in a pot of boiling water and cook for about 10 minutes.
- 3. Wash the thyme and oregano, shake off excess water, and pick off the leaves. Mix the herbs with olive oil, paprika powder, salt, and pepper. Grate the Parmesan finely.
- 4. Drain the Brussels sprouts. Place them on a baking sheet lined with baking paper and flatten them using the bottom of a glass. Brush them with the spice mixture and sprinkle with Parmesan.
- 5. Bake the smashed Brussels sprouts in the preheated oven at 225 °C (convection 200 °C; gas mark 3–4) for about 10 to 15 minutes until crispy.
- 6. Wash the parsley and cilantro, shake off excess water, and chop them finely. Peel the garlic clove and chop it finely as well. Mix everything with yogurt, lemon juice, salt, and pepper to make the dip.
- 7. Serve the warm smashed Brussels sprouts with the dip.
