  1. 1. Peel and finely chop the onions and garlic. Clean and peel the celery and carrots, then grate them coarsely. Wash the rosemary, shake it dry, and chop it finely.
  2. 2. Heat the oil in a deep pan. Add the minced meat and onions and fry them over high heat for 8 to 10 minutes until well browned. Then add the vegetables and garlic and cook for 2 to 3 minutes. Season with salt and pepper.
  3. 3. Stir in the tomato paste and fry for 1 minute. Pour in 200 ml of water, add the tomatoes and rosemary, and let the sauce simmer covered over low heat for about 30 minutes, stirring occasionally.
  4. 4. 15 minutes before the end of the cooking time, boil the pasta according to package instructions in plenty of boiling salted water until al dente (still slightly firm). Then drain them in a colander and let them drip dry.
  5. 5. Finally, season the Bolognese sauce with salt, pepper, and oregano and serve it with the pasta. Sprinkle with grated Parmesan and fresh parsley if desired.
