  1. 1. Put the birch sugar and 30 milliliters of water into a pot.
  2. 2. Heat the mixture while stirring constantly until it boils.
  3. 3. Remove the pot from the heat briefly when it starts to bubble.
  4. 4. Add 80 milliliters of cream spoonful by spoonful and stir well.
  5. 5. Place the pot back on the stove and set the heat to medium.
  6. 6. Let the sauce simmer and stir regularly until it turns golden brown.
  7. 7. Remove the caramel sauce from the heat.
  8. 8. Stir the butter into the warm sauce.
  9. 9. Add 10 milliliters of water and continue stirring.
  10. 10. Add the remaining cream and mix everything until smooth.
  11. 11. Season the sauce with a pinch of salt.
  12. 12. Stir vigorously once more until the sauce looks glossy.
