  1. 1. Sift the flour and baking powder onto a clean work surface using a sieve.
  2. 2. Mix the sugar, cinnamon, and salt in a small bowl and sprinkle the mixture evenly over the flour.
  3. 3. Cut the butter into small cubes and distribute them over the flour mixture.
  4. 4. Slice the vanilla pod lengthwise and scrape out the seeds with a knife.
  5. 5. Add the vanilla seeds to the flour mixture and crack the eggs into the center.
  6. 6. Quickly knead the ingredients by hand until you have a smooth dough.
  7. 7. If the dough seems too dry, add a small splash of cold water.
  8. 8. Wrap the dough in a damp kitchen towel and chill it in the refrigerator for 1 hour.
  9. 9. Divide the chilled dough into two equal parts and knead them briefly.
  10. 10. Lightly dust the work surface with flour and roll out the dough portions thinly.
  11. 11. Use an anchor-shaped cookie cutter to cut out the cookies.
  12. 12. Place the cut-out cookies on baking sheets lined with baking paper.
  13. 13. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
  14. 14. Bake the cookies one after another for about 8 to 10 minutes until golden brown.
  15. 15. Remove the trays, lift the baking paper with the cookies off the trays, and let them cool completely.
