  1. 1. Break the oat cookies into pieces and grind them into fine crumbs using a blender.
  2. 2. Mix the cookie crumbs with the melted butter in a bowl.
  3. 3. Line a springform pan with baking paper.
  4. 4. Press the butter-cookie mixture firmly into the bottom of the pan.
  5. 5. Wash the limes thoroughly under hot water and pat them dry.
  6. 6. Finely grate the zest of one lime.
  7. 7. Squeeze the juice from one lime.
  8. 8. Slice the second lime into thin rounds.
  9. 9. Add the skyr, cream cheese, sugar, vanilla sugar, and lime zest to a large bowl.
  10. 10. Mix all the filling ingredients thoroughly.
  11. 11. Soak the gelatin leaves in cold water for three minutes.
  12. 12. Warm the lime juice in a saucepan, but do not let it boil.
  13. 13. Squeeze the soaked gelatin and dissolve it in the warm juice.
  14. 14. Stir two tablespoons of the cheese mixture into the warm gelatin mixture.
  15. 15. Pour the gelatin mixture quickly into the remaining cheese cream.
  16. 16. Mix everything thoroughly until you have a homogeneous mass.
  17. 17. Stir 120 grams of pistachios into the cream.
  18. 18. Pour the filling onto the prepared cookie base.
  19. 19. Smooth the surface.
  20. 20. Place the tart in the refrigerator for at least four hours.
  21. 21. Take the tart out of the refrigerator before serving.
  22. 22. Decorate it with chopped pistachios and the lime slices.
