🍰 No-Bake Lime-Pistachio Tart with Oats and Skyr

Ingredients
- 200 g oat cookies (Cookies)
- 80 g melted butter
- 3 organic limes
- 2 tubs Exquisa (Mild Skyr Natural)
- 2 tubs Exquisa (Cream Cheese The Creamy)
- 180 g sugar
- 2 packets vanilla sugar
- 7 sheets gelatin
- 140 g pistachios
Instructions
- 1. Break the oat cookies into pieces and grind them into fine crumbs using a blender.
- 2. Mix the cookie crumbs with the melted butter in a bowl.
- 3. Line a springform pan with baking paper.
- 4. Press the butter-cookie mixture firmly into the bottom of the pan.
- 5. Wash the limes thoroughly under hot water and pat them dry.
- 6. Finely grate the zest of one lime.
- 7. Squeeze the juice from one lime.
- 8. Slice the second lime into thin rounds.
- 9. Add the skyr, cream cheese, sugar, vanilla sugar, and lime zest to a large bowl.
- 10. Mix all the filling ingredients thoroughly.
- 11. Soak the gelatin leaves in cold water for three minutes.
- 12. Warm the lime juice in a saucepan, but do not let it boil.
- 13. Squeeze the soaked gelatin and dissolve it in the warm juice.
- 14. Stir two tablespoons of the cheese mixture into the warm gelatin mixture.
- 15. Pour the gelatin mixture quickly into the remaining cheese cream.
- 16. Mix everything thoroughly until you have a homogeneous mass.
- 17. Stir 120 grams of pistachios into the cream.
- 18. Pour the filling onto the prepared cookie base.
- 19. Smooth the surface.
- 20. Place the tart in the refrigerator for at least four hours.
- 21. Take the tart out of the refrigerator before serving.
- 22. Decorate it with chopped pistachios and the lime slices.
- 23. Enjoy the tart.
