🍽️ Skyr Bowl with Roasted Seeds, Grapefruit, and Kiwi

Ingredients
- 15 g Pistachio kernels (1 tbsp)
- 15 g Almond kernels (1 tbsp)
- 15 g Walnut kernels (1 tbsp)
- 15 g Cashew kernels (1 tbsp)
- 10 g Coconut chips (1 tbsp)
- 1 Grapefruit (or blood orange)
- 2 Kiwis
- 800 g Skyr
- 8 g puffed Amaranth (2 tbsp)
Instructions
- 1. Place the seeds and coconut chips in a hot pan.
- 2. Roast the ingredients over medium heat without adding any fat.
- 3. Let the mixture roast for 3 to 4 minutes.
- 4. Remove the roasted seeds and coconut chips from the pan.
- 5. Set the roasted ingredients aside.
- 6. Slice the grapefruit into rounds.
- 7. Cut each grapefruit slice into quarters.
- 8. Peel the grapefruit quarters if you prefer.
- 9. Peel the kiwis.
- 10. Slice the peeled kiwis.
- 11. Fill four small bowls with the skyr.
- 12. Add the prepared grapefruit and kiwi pieces to the bowls.
- 13. Sprinkle the roasted seeds and amaranth over the fruit.
- 14. Serve the bowls immediately.
