  2. 2. Thoroughly scale the cod (Skrei).
  3. 3. Cut the fish into serving-sized pieces.
  4. 4. Season the fish pieces with salt and pepper.
  5. 5. Set the prepared fish aside.
  6. 6. Adjust the oven temperature to 200 degrees Celsius (conventional heat).
  7. 7. Peel the garlic.
  8. 8. Crush the garlic cloves whole so they do not fall apart.
  9. 9. Cut the onion into eighths.
  10. 10. Place the garlic and onion on an oiled baking sheet.
  11. 11. Roast the vegetables for about 20 minutes on the middle rack.
  12. 12. Melt the sugar in a pan.
  13. 13. Wait until the sugar caramelizes and turns golden brown.
  14. 14. Add the roasted garlic to the pan.
