🍽️ North Sea Cod with Caramelized Red Wine Sauce and Mushrooms

Ingredients
- 800 g Norwegian Skrei fillet (winter cod)
- 2 tbsp Salt
- 0.5 tsp Pepper
- Oil
- butter
- 15 g Butter
- 50 ml Sugar
- 300 ml Water
- 0.5 pinch ground black pepper
- 1 tsp Cornstarch
- 0.5 tbsp Olive oil
- 0.5 bottle Red wine
- 75 ml concentrated veal stock
- 1 Onion
- Salt (and pepper)
- 250 g Mushrooms
- butter
- Potatoes
Instructions
- 1. Preheat the oven to 180 degrees Celsius (conventional heat).
- 2. Thoroughly scale the cod (Skrei).
- 3. Cut the fish into serving-sized pieces.
- 4. Season the fish pieces with salt and pepper.
- 5. Set the prepared fish aside.
- 6. Adjust the oven temperature to 200 degrees Celsius (conventional heat).
- 7. Peel the garlic.
- 8. Crush the garlic cloves whole so they do not fall apart.
- 9. Cut the onion into eighths.
- 10. Place the garlic and onion on an oiled baking sheet.
- 11. Roast the vegetables for about 20 minutes on the middle rack.
- 12. Melt the sugar in a pan.
- 13. Wait until the sugar caramelizes and turns golden brown.
- 14. Add the roasted garlic to the pan.
- 15. Add the roasted onions to the pan.
- 16. Add the red wine to the pan.
- 17. Add the veal stock to the pan.
- 18. Add the water to the pan.
- 19. Reduce the mixture by simmering.
- 20. Stop when only 500 milliliters of liquid remain.
- 21. Strain the sauce through a sieve.
- 22. Remove the solid ingredients from the sauce.
- 23. Dissolve cornstarch in a little cold water.
- 24. Stir the starch solution into the sauce.
- 25. Bring the sauce to a boil.
- 26. Stir the butter into the sauce.
- 27. Season the sauce with pepper.
- 28. Sear the cod portions in a pan.
- 29. Use a little oil and butter for frying.
- 30. Start with the skin side of the fish.
- 31. Place the seared fish on a baking sheet lined with parchment paper.
- 32. Ensure the skin side is facing up.
- 33. Bake the fish for about 6 minutes on the middle rack.
- 34. Remove the fish from the oven when it is just cooked through.
- 35. Clean the mushrooms.
- 36. Sauté the mushrooms in butter.
- 37. Season the mushrooms with salt.
- 38. Season the mushrooms with pepper.
- 39. Pan-fry raw potatoes to make pan-fried potatoes.
- 40. Serve the fish with the red wine sauce.
- 41. Serve the fish with the sautéed mushrooms.
- 42. Serve the fish with the pan-fried potatoes.
