  1. 1. Wash the spinach three times in cold water until it is clean.
  2. 2. Thoroughly spin-dry the spinach.
  3. 3. Soak the raisins in a little water.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Heat the oil in a pan.
  6. 6. Fry the pine nuts until light brown.
  7. 7. Add the chopped garlic to the pan.
  8. 8. Sauté the garlic briefly.
  9. 9. Add the dry spinach to the pan.
  10. 10. Fry the spinach for three to four minutes, shaking the pan occasionally.
  11. 11. Drain the raisins and add them to the spinach.
  12. 12. Season the dish with salt and pepper.
  13. 13. Grate some fresh nutmeg over it.
  14. 14. Transfer the spinach to a plate.
  15. 15. Let the spinach cool down.
  16. 16. Rinse the lemon briefly under hot water.
  17. 17. Dry the lemon.
  18. 18. Grate the lemon zest finely over the cooled spinach.
