🍽️ Crispy Spinach with Pine Nuts and Lemon Zest

Ingredients
- 400 g tender leaf spinach
- 30 g sultanina raisins
- 3 cloves garlic
- 2 tbsp olive oil
- 20 g pine nuts
- salt
- pepper
- nutmeg
- 1 organic lemon
Instructions
- 1. Wash the spinach three times in cold water until it is clean.
- 2. Thoroughly spin-dry the spinach.
- 3. Soak the raisins in a little water.
- 4. Peel the garlic and chop it finely.
- 5. Heat the oil in a pan.
- 6. Fry the pine nuts until light brown.
- 7. Add the chopped garlic to the pan.
- 8. Sauté the garlic briefly.
- 9. Add the dry spinach to the pan.
- 10. Fry the spinach for three to four minutes, shaking the pan occasionally.
- 11. Drain the raisins and add them to the spinach.
- 12. Season the dish with salt and pepper.
- 13. Grate some fresh nutmeg over it.
- 14. Transfer the spinach to a plate.
- 15. Let the spinach cool down.
- 16. Rinse the lemon briefly under hot water.
- 17. Dry the lemon.
- 18. Grate the lemon zest finely over the cooled spinach.
