  1. 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  2. 2. Score the chestnuts in a cross shape.
  3. 3. Roast the chestnuts in the preheated oven or in a heavy pan for about 30 minutes.
  4. 4. Remove the chestnuts when they are brown and the inside appears golden yellow.
  5. 5. Let the chestnuts cool down slightly.
  6. 6. Peel the cooled chestnuts.
  7. 7. Peel the ginger and cut it into two pieces.
  8. 8. Caramelize the sugar until it is golden yellow.
  9. 9. Add 400 milliliters of water, the lemon juice, and the ginger pieces to the caramelized sugar.
  10. 10. Bring the mixture to a boil.
  11. 11. Add the peeled chestnuts to the boiling liquid.
  12. 12. Bring everything to a boil again.
  13. 13. Fill the chestnuts and the liquid into clean jars.
  14. 14. Seal the jars tightly.
