Ingredients
- 500 g chestnuts
- 25 g ginger
- 200 g sugar
- 2 tbsp lemon juice
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Score the chestnuts in a cross shape.
- 3. Roast the chestnuts in the preheated oven or in a heavy pan for about 30 minutes.
- 4. Remove the chestnuts when they are brown and the inside appears golden yellow.
- 5. Let the chestnuts cool down slightly.
- 6. Peel the cooled chestnuts.
- 7. Peel the ginger and cut it into two pieces.
- 8. Caramelize the sugar until it is golden yellow.
- 9. Add 400 milliliters of water, the lemon juice, and the ginger pieces to the caramelized sugar.
- 10. Bring the mixture to a boil.
- 11. Add the peeled chestnuts to the boiling liquid.
- 12. Bring everything to a boil again.
- 13. Fill the chestnuts and the liquid into clean jars.
- 14. Seal the jars tightly.
