Ingredients
- 2 Yufka pastry sheets approx. 30x30 cm (or phyllo dough)
- 400 g sheep's cheese (feta)
- 1 handful parsley
- 1 sprig thyme
- 2 tbsp olive oil
- pepper (from the mill)
- 0.5 tsp paprika powder (hot)
- 1 egg
- 1 tbsp black sesame
- 1 tbsp white sesame
Instructions
- 1. Lay out the phyllo dough flat.
- 2. Cut the dough into 12 to 16 triangles.
- 3. Mash the sheep's cheese with a fork until crumbly.
- 4. Wash the herbs and shake them dry.
- 5. Pluck the leaves off the stems.
- 6. Finely chop the herbs.
- 7. Mix the feta with the herbs.
- 8. Add the oil.
- 9. Season with pepper.
- 10. Add spicy paprika.
- 11. Mix the filling well.
- 12. Separate the egg.
- 13. Reserve the egg white.
- 14. Place the triangles with the point facing up.
- 15. Place 1 to 2 tablespoons of the filling on the bottom quarter of each triangle.
- 16. Fold the side corners towards the center.
- 17. Roll the dough up to the middle.
- 18. Brush the tip with egg white.
- 19. Roll the phyllo dough completely.
- 20. Preheat the oven to 200 degrees Celsius fan-assisted.
- 21. Place the dough rolls on a baking sheet lined with baking paper.
- 22. Brush the rolls with the egg yolk.
- 23. Sprinkle them with sesame seeds.
- 24. Bake them for 10 to 15 minutes until golden brown.
