🍽️ Crispy Shrimp Pancakes Made with Chickpea Flour

Ingredients
- 200 g flour
- 100 g chickpea flour
- 1 egg
- 1 shallot
- 2 tbsp freshly chopped parsley
- salt
- pepper (from the mill)
- olive oil (for frying)
- 300 g North Sea shrimp (peeled)
Instructions
- 1. Mix both types of flour in a bowl with the egg and about 400 milliliters of water until you have a smooth batter.
- 2. Let the batter rest for about 20 minutes.
- 3. Peel the shallot and chop it very finely.
- 4. Chop the parsley and stir it into the batter along with the shallot.
- 5. Finally, season the mixture with salt and pepper.
- 6. Heat some oil in a frying pan.
- 7. Add one to two tablespoons of batter into the hot pan.
- 8. Immediately sprinkle some shrimp over the batter.
- 9. Fry the pancakes for one to two minutes until golden brown.
- 10. Flip the pancakes and cook them for about one more minute.
- 11. Remove the finished pancakes from the pan.
- 12. Repeat the process until all the batter has been used.
- 13. Serve the pancakes with fried bell peppers if you like.
