🍽️ Classic Shrimp Cocktail with Homemade Sauce

Ingredients
- 400 g crayfish tails (kitchen-ready)
- 2 sprigs dill
- 2 fresh egg yolks
- 1 pinch salt
- 1 tsp mustard
- 0.5 organic lemon (juice)
- 250 ml olive oil
- 20 ml cognac
- 4 tbsp ketchup
- cayenne pepper
Instructions
- 1. Make sure all ingredients for the mayonnaise are at room temperature.
- 2. Vigorously whisk the egg yolks with a pinch of salt, the mustard, and one tablespoon of lemon juice.
- 3. First, add only a few drops of oil to the egg yolks and whisk them in.
- 4. Now slowly pour in the rest of the oil in a thin stream while whisking constantly.
- 5. Ensure the oil is immediately bound by the egg yolk until a thick, creamy mayonnaise forms.
- 6. Set aside four tablespoons of the finished mayonnaise.
- 7. Stir the remaining mayonnaise thoroughly with the cognac and the ketchup.
- 8. Finally, season the sauce to taste with salt and cayenne pepper.
- 9. Rinse the crayfish tails under cold water and let them drain well.
- 10. Set aside four of the tails for decoration.
- 11. Mix the remaining crayfish tails into the prepared cocktail sauce.
- 12. Wash the dill, shake it dry, and pick off the fine tips.
- 13. Fill the shrimp sauce into four prepared glasses.
- 14. Place the reserved mayonnaise on top of the sauce.
- 15. Garnish each glass with one crayfish tail and a dill tip.
- 16. Serve the cocktail immediately.
