🍽️ Grilled Shrimp Skewers with Fresh Tomatoes

Ingredients
- 400 g shrimp (peeled and deveined)
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 pinch ground coriander
- 0.5 handful thyme
- 200 g cherry tomatoes
- salt
- pepper
Instructions
- 1. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
- 2. Whisk the olive oil with the lemon juice and the chopped coriander in a bowl.
- 3. Rinse the thyme sprigs, shake them dry, and pluck the leaves from the stems.
- 4. Stir the thyme leaves into the oil-lemon mixture.
- 5. Coat the shrimp thoroughly with this marinade.
- 6. Let the shrimp marinate covered in the refrigerator for at least one hour.
- 7. Wash the cherry tomatoes and halve them.
- 8. Take the shrimp out of the marinade and let them drain briefly.
- 9. Thread the shrimp and the tomato halves alternately onto the skewers.
- 10. Heat a non-stick pan over low heat.
- 11. Fry the skewers for about three minutes, turning them once.
- 12. Season the skewers with salt and pepper while frying.
- 13. Arrange the finished skewers on the plates.
- 14. Drizzle the skewers with the remaining marinade and serve.
