  1. 1. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
  2. 2. Whisk the olive oil with the lemon juice and the chopped coriander in a bowl.
  3. 3. Rinse the thyme sprigs, shake them dry, and pluck the leaves from the stems.
  4. 4. Stir the thyme leaves into the oil-lemon mixture.
  5. 5. Coat the shrimp thoroughly with this marinade.
  6. 6. Let the shrimp marinate covered in the refrigerator for at least one hour.
  7. 7. Wash the cherry tomatoes and halve them.
  8. 8. Take the shrimp out of the marinade and let them drain briefly.
  9. 9. Thread the shrimp and the tomato halves alternately onto the skewers.
  10. 10. Heat a non-stick pan over low heat.
  11. 11. Fry the skewers for about three minutes, turning them once.
  12. 12. Season the skewers with salt and pepper while frying.
  13. 13. Arrange the finished skewers on the plates.
  14. 14. Drizzle the skewers with the remaining marinade and serve.
