🥗 Shrimp glass noodle salad with peanuts

Ingredients
- 300 g glass noodles
- salt
- 2 carrots
- 3 spring onions
- 1 tbsp soybean oil
- 2 tbsp unsalted peanuts
- 3 tbsp peanut oil
- 2 tbsp light soy sauce
- pepper
- 400 g cooked shrimp (peeled and deveined)
- cilantro
Instructions
- 1. Cook the glass noodles according to the package instructions.
- 2. Drain the noodles and rinse them with cold water to cool them down.
- 3. Peel the carrots.
- 4. Cut the carrots into very fine strips.
- 5. Wash the onions.
- 6. Remove the tough ends of the onions.
- 7. Slice the onions into fine rings.
- 8. Heat one tablespoon of oil in a pan.
- 9. Add the onion rings and carrot strips to the hot pan.
- 10. Sauté the vegetables for about two minutes.
- 11. Remove the vegetables from the pan.
- 12. Mix the sautéed vegetables with the cooled noodles.
- 13. Heat a second pan without adding extra oil.
- 14. Roast the peanuts in the pan until golden brown.
- 15. Remove the peanuts from the pan.
- 16. Let the peanuts cool down for a short while.
- 17. Whisk the remaining oil with the soy sauce.
- 18. Season the sauce with black pepper.
- 19. Add the shrimp and the roasted peanuts to the noodle mixture.
- 20. Mix everything well with the soy sauce dressing.
- 21. Fill the salad into a small bowl.
- 22. Garnish the salad with fresh coriander.
- 23. Serve the salad immediately.
