  1. 1. Cook the glass noodles according to the package instructions.
  2. 2. Drain the noodles and rinse them with cold water to cool them down.
  3. 3. Peel the carrots.
  4. 4. Cut the carrots into very fine strips.
  5. 5. Wash the onions.
  6. 6. Remove the tough ends of the onions.
  7. 7. Slice the onions into fine rings.
  8. 8. Heat one tablespoon of oil in a pan.
  9. 9. Add the onion rings and carrot strips to the hot pan.
  10. 10. Sauté the vegetables for about two minutes.
  11. 11. Remove the vegetables from the pan.
  12. 12. Mix the sautéed vegetables with the cooled noodles.
  13. 13. Heat a second pan without adding extra oil.
  14. 14. Roast the peanuts in the pan until golden brown.
  15. 15. Remove the peanuts from the pan.
  16. 16. Let the peanuts cool down for a short while.
  17. 17. Whisk the remaining oil with the soy sauce.
  18. 18. Season the sauce with black pepper.
  19. 19. Add the shrimp and the roasted peanuts to the noodle mixture.
  20. 20. Mix everything well with the soy sauce dressing.
  21. 21. Fill the salad into a small bowl.
  22. 22. Garnish the salad with fresh coriander.
  23. 23. Serve the salad immediately.
