🥤 Shrimp and Avocado Cocktail with Chili-Lemon Dressing

Ingredients
- 1 untreated lemon
- 1 red chili pepper
- 1 garlic clove
- 600 g Scampi (kitchen-ready, peeled and deveined)
- 1 avocado
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- chives (for garnishing)
Instructions
- 1. Rinse the lemon under hot water and pat it dry.
- 2. Use a zester to remove the lemon peel.
- 3. Cut the lemon in half and squeeze out the juice.
- 4. Wash the chili pepper and cut it in half lengthwise.
- 5. Remove the seeds from the chili and chop it finely.
- 6. Peel the garlic and chop it finely as well.
- 7. Mix the shrimp with one tablespoon of lemon juice, the chopped garlic, and the chili.
- 8. Let the shrimp marinate for one hour.
- 9. Peel the avocado and cut it in half lengthwise.
- 10. Remove the pit of the avocado.
- 11. Cut the avocado flesh into pieces.
- 12. Mix the avocado pieces immediately with the remaining lemon juice.
- 13. Pat the marinated shrimp dry.
- 14. Season the shrimp with pepper.
- 15. Fry the shrimp in hot olive oil until brown.
- 16. Remove the browned shrimp from the pan.
- 17. Mix the shrimp with the avocado pieces.
- 18. Season the mixture with salt to taste.
- 19. Fill the mixture into small bowls.
- 20. Garnish the dish with chive tips and lemon zest.
- 21. Serve the cocktail.
