🥤 Fresh Shrimp Cocktail with Avocado

Ingredients
- 1 Lemon
- 2 Avocados
- 1 Spring onion
- 300 g Shrimp (kitchen-ready, cooked and peeled)
- 1 Egg yolk
- 2 tbsp Orange juice
- Salt
- Pepper (from the mill)
- 80 ml Vegetable oil
- 1 tbsp Cognac
- 100 ml Whipping cream
- Arugula (for garnishing)
- Tortilla chips (for garnishing)
Instructions
- 1. Cut the lemon in half and squeeze out the juice.
- 2. Cut the avocados in half and remove the pit.
- 3. Scoop out the avocado flesh with a spoon.
- 4. Dice the avocado flesh into small cubes.
- 5. Drizzle the avocado cubes immediately with 2 to 3 tablespoons of lemon juice.
- 6. Clean the spring onions and wash them thoroughly.
- 7. Slice the spring onions into thin rings.
- 8. Whisk the egg yolk, orange juice, salt, and pepper vigorously with a whisk.
- 9. Add the oil drop by drop while stirring until a mayonnaise forms.
- 10. Stir the cognac into the mayonnaise.
- 11. Whip the cream until it is half-stiff.
- 12. Gently fold the whipped cream into the sauce.
- 13. Place the avocado cubes, spring onion rings, and shrimp into a bowl.
- 14. Toss the ingredients in the bowl with the cocktail sauce.
- 15. Divide the mixture into four small bowls.
- 16. Garnish the cocktails with cress and tortilla chips.
- 17. Serve the dish immediately.
