  5. 5. Drizzle the avocado cubes immediately with 2 to 3 tablespoons of lemon juice.
  6. 6. Clean the spring onions and wash them thoroughly.
  7. 7. Slice the spring onions into thin rings.
  8. 8. Whisk the egg yolk, orange juice, salt, and pepper vigorously with a whisk.
  9. 9. Add the oil drop by drop while stirring until a mayonnaise forms.
  10. 10. Stir the cognac into the mayonnaise.
  11. 11. Whip the cream until it is half-stiff.
  12. 12. Gently fold the whipped cream into the sauce.
  13. 13. Place the avocado cubes, spring onion rings, and shrimp into a bowl.
