  1. 1. Add both types of flour and the salt to a bowl and mix them.
  2. 2. Beat the butter together with the sugar and lemon zest until creamy.
  3. 3. Sift the flour mixture over the butter mixture.
  4. 4. Stir the ingredients in gradually until they are combined.
  5. 5. Knead the mixture into a smooth dough.
  6. 6. Shape the dough into a ball.
  7. 7. Wrap the dough ball in cling film.
  8. 8. Place the foil with the dough in the refrigerator for about 30 minutes.
  9. 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  10. 10. Line a springform pan with baking paper.
  11. 11. Lightly dust a work surface with flour.
  12. 12. Roll out the dough on the floured surface so that it fits into the pan.
  13. 13. Place the rolled-out dough into the prepared pan.
  14. 14. Bake the pastry in the preheated oven for about 25 minutes.
  15. 15. Remove the pastry from the oven.
  16. 16. Cut the pastry into pieces while it is still warm.
  17. 17. Sprinkle the pieces generously with sugar.
