🍽️ Crunchy Shortbread Cookies

Ingredients
- 200 g flour
- 50 g rice flour
- 1 pinch salt
- 160 g soft butter
- 100 g sugar
- 1 tsp organic lemon zest
- powdered sugar (for dusting)
Instructions
- 1. Add both types of flour and the salt to a bowl and mix them.
- 2. Beat the butter together with the sugar and lemon zest until creamy.
- 3. Sift the flour mixture over the butter mixture.
- 4. Stir the ingredients in gradually until they are combined.
- 5. Knead the mixture into a smooth dough.
- 6. Shape the dough into a ball.
- 7. Wrap the dough ball in cling film.
- 8. Place the foil with the dough in the refrigerator for about 30 minutes.
- 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 10. Line a springform pan with baking paper.
- 11. Lightly dust a work surface with flour.
- 12. Roll out the dough on the floured surface so that it fits into the pan.
- 13. Place the rolled-out dough into the prepared pan.
- 14. Bake the pastry in the preheated oven for about 25 minutes.
- 15. Remove the pastry from the oven.
- 16. Cut the pastry into pieces while it is still warm.
- 17. Sprinkle the pieces generously with sugar.
