🍝 Mushroom Noodles with Toasted Sesame

Ingredients
- 500 g Soba noodles
- 400 g soybeans (frozen)
- 150 g shiitake mushrooms
- 30 g sesame seeds (2 tbsp)
- 1 tbsp sesame oil
- soy sauce
- cayenne pepper
Instructions
- 1. Bring water to a boil.
- 2. Cook the noodles in the boiling water for the time specified on the package.
- 3. Cook the soybeans in a separate pot of boiling water for the time specified on the package.
- 4. Drain the noodles.
- 5. Drain the soybeans.
- 6. Clean the shiitake mushrooms.
- 7. Slice the mushrooms into thin pieces.
- 8. Put the sesame seeds into a dry pan.
- 9. Toast the sesame seeds without extra oil until they smell fragrant.
- 10. Remove the sesame seeds from the pan.
- 11. Set the sesame seeds aside.
- 12. Add oil to the pan.
- 13. Heat the oil in the pan.
- 14. Fry the mushroom slices over medium heat for 2 to 3 minutes.
- 15. Add the drained noodles to the pan.
- 16. Add the drained soybeans to the pan.
- 17. Stir-fry the noodles and soybeans for 1 to 2 minutes.
- 18. Add the toasted sesame seeds back into the pan.
- 19. Season the dish with soy sauce.
- 20. Season the dish with cayenne pepper.
- 21. Divide the finished noodles onto four plates.
