🍽️ Shepherd's Pie with Red Cabbage

Ingredients
- 300 g mealy cooking potatoes
- salt
- 1 carrot
- 250 g celery stalks
- 1 onion
- 700 g minced beef
- 2 tbsp oil
- 1 tsp tomato paste
- 150 ml meat broth
- pepper (from the mill)
- 100 ml hot milk
- nutmeg
- 100 g freshly grated cheddar
- butter (for the molds)
- 700 g red cabbage
- 1 apple (e.g. Boskop)
- 50 g clarified butter
- 1 tbsp sugar
- 1 onion
- 4 cloves
- 1 bay leaf
- 0.5 cinnamon stick
- 0.13 l red wine
- 0.13 l red wine vinegar
- 1 tbsp cranberries (jar)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Peel the potatoes and wash them.
- 3. Boil the potatoes in salted water for 25 to 30 minutes.
- 4. Wash the carrot and the celery.
- 5. Peel the carrot and the celery.
- 6. Dice the carrot and the celery finely.
- 7. Peel the onion.
- 8. Dice the onion finely.
- 9. Heat oil in a pan.
- 10. Fry the minced meat and the prepared vegetables in the hot oil.
- 11. Stir the tomato paste into the meat and vegetable mixture.
- 12. Pour in the broth.
- 13. Season the filling with salt and pepper.
- 14. Drain the cooked potatoes.
- 15. Let the potatoes steam dry.
- 16. Press the potatoes through a potato ricer.
- 17. Stir the hot milk into the mashed potatoes.
- 18. Season the mash with salt, pepper, and nutmeg.
- 19. Grease four small pie dishes with butter.
- 20. Fill the meat mixture into the dishes.
- 21. Spread the mashed potatoes evenly over the meat filling.
- 22. Sprinkle cheese over the top.
- 23. Bake the pies in the preheated oven for 40 to 45 minutes until golden brown.
- 24. Remove the outer leaves from the red cabbage.
- 25. Halve the cabbage head.
- 26. Cut out the core from the cabbage.
- 27. Grate the cabbage halves finely.
- 28. Wash the apple.
- 29. Quarter the apple.
- 30. Remove the core from the apple quarters.
- 31. Peel the apple quarters.
- 32. Cut the apple pieces into small cubes.
- 33. Heat clarified butter in a pot.
- 34. Add the apple pieces to the hot clarified butter.
- 35. Sprinkle the apples with sugar.
- 36. Caramelize the apples slightly.
- 37. Add the grated red cabbage.
- 38. Sauté the red cabbage with the apples.
- 39. Deglaze the red cabbage with vinegar and wine.
- 40. Stab the onion with the cloves.
- 41. Add the studded onion, the cinnamon stick, and the bay leaf to the red cabbage.
- 42. Simmer the red cabbage covered on low heat for approx. 40 minutes until tender.
- 43. Season the red cabbage with the cranberries and salt.
- 44. Remove the spices and the studded onion from the red cabbage.
- 45. Serve the pies together with the red cabbage.
