  1. 1. Wash the potatoes thoroughly.
  2. 2. Peel the potatoes if you prefer, or leave the skin on.
  3. 3. Cut the potatoes into medium-sized cubes.
  4. 4. Place the potato cubes into a pot.
  5. 5. Cover the potatoes with water.
  6. 6. Bring the water to a boil.
  7. 7. Add one teaspoon of baking powder to the boiling water.
  8. 8. Add one teaspoon of salt to the water.
  9. 9. Boil the potatoes for 5 to 7 minutes.
  10. 10. Preheat the oven to 220 degrees Celsius (conventional heat).
  11. 11. Set the fan force to 200 degrees Celsius if using fan-assisted cooking.
  12. 12. Set the gas oven to level 3 to 4 if using gas.
  13. 13. Place a baking tray in the oven to heat up along with it.
  14. 14. Drain the cooking water from the potatoes.
  15. 15. Peel the garlic clove.
  16. 16. Peel the onion.
  17. 17. Finely chop the garlic.
  18. 18. Finely chop the onion.
  19. 19. Add the chopped garlic to the drained potatoes.
  20. 20. Add the chopped onion to the potatoes.
  21. 21. Add olive oil to the mixture.
  22. 22. Add lime juice to the mixture.
  23. 23. Add one teaspoon of salt to the mixture.
  24. 24. Add chili flakes to the mixture.
  25. 25. Place a lid on the pot.
  26. 26. Shake the pot vigorously to mix everything well.
  27. 27. Remove the hot baking tray from the oven.
  28. 28. Spread the potato mixture evenly on the hot tray.
  29. 29. Place the tray back into the oven.
  30. 30. Bake the potatoes for 25 to 30 minutes.
  31. 31. Remove the potatoes when they are golden brown.
