🍽️ Asparagus Rolls in Sesame Crêpes

Ingredients
- 1 kg green asparagus
- 20 g butter
- 1 tsp sugar
- salt, pepper
- 2 tsp liquid honey
- 30 g flour
- 125 ml milk
- 2 eggs
- 2 tbsp sesame seeds
Instructions
- 1. Peel the lower part of the asparagus stalks.
- 2. Cut off the woody ends of the stalks.
- 3. Bring water to a boil and add some salt.
- 4. Add 10 grams of butter and one teaspoon of sugar to the boiling water.
- 5. Cook the asparagus stalks in it for 10 to 12 minutes.
- 6. Drain the asparagus.
- 7. Rinse the asparagus briefly with cold water to stop the cooking process.
- 8. Warm up soy sauce, pepper, and honey in a pan.
- 9. Stir flour, milk, and a pinch of salt until smooth.
- 10. Stir the eggs into the batter.
- 11. Melt 5 grams of butter in a pan.
- 12. Fry the crêpes one after the other from the batter.
- 13. Fry each side of the crêpes for 2 minutes until golden brown.
- 14. Toss the asparagus stalks briefly in the soy sauce mixture.
- 15. Halve the finished crêpes.
- 16. Fill the crêpes with 6 to 8 asparagus stalks each.
- 17. Sprinkle the rolls with sesame seeds.
- 18. Serve the dish.
