  2. 2. Cut the flesh into small cubes.
  3. 3. Toss the apple cubes in sifted flour until lightly coated.
  4. 4. Heat ghee in a pan.
  5. 5. Fry the apple pieces for 3 minutes until golden yellow.
  6. 6. Toast the sesame seeds in a separate pan without fat.
  7. 7. Whip the cream until stiff.
  8. 8. Stir the plum wine into the whipped cream.
  9. 9. Distribute the fried apple pieces onto the plates.
  10. 10. Sprinkle the apples with the toasted sesame.
  11. 11. Place a dollop of the cream mixture on each apple.
  12. 12. Sprinkle the cream with brown sugar.
  13. 13. Cut the lemon balm leaves into fine strips.
  14. 14. Scatter the balm strips over the finished dish.
