🍰 Crispy Apple-Sesame Balls with Cream

Ingredients
- 2 tart firm apples
- 30 g flour
- 50 g ghee
- 120 g whipping cream
- 0.5 tbsp brown sugar
- 1.5 tbsp plum wine
- 1 tbsp sesame seeds
- 4 leaves lemon balm
Instructions
- 1. Peel the apples and remove the core using a corer.
- 2. Cut the flesh into small cubes.
- 3. Toss the apple cubes in sifted flour until lightly coated.
- 4. Heat ghee in a pan.
- 5. Fry the apple pieces for 3 minutes until golden yellow.
- 6. Toast the sesame seeds in a separate pan without fat.
- 7. Whip the cream until stiff.
- 8. Stir the plum wine into the whipped cream.
- 9. Distribute the fried apple pieces onto the plates.
- 10. Sprinkle the apples with the toasted sesame.
- 11. Place a dollop of the cream mixture on each apple.
- 12. Sprinkle the cream with brown sugar.
- 13. Cut the lemon balm leaves into fine strips.
- 14. Scatter the balm strips over the finished dish.
