🍰 Napkin Dumplings with Compote of Dried Fruits

Ingredients
- 300 g Brioche (store-bought)
- 150 ml Milk
- 8 Oranges
- 100 g Dried Fruit Mix
- 100 g Powdered Sugar
- Pulp from 1 Vanilla Pods
- 2 tsp Cornstarch
- 2 tbsp Orange Liqueur
- 100 g Soft Butter
- Cinnamon
- 2 Eggs (Size M)
- 1 Egg Yolk (M)
Instructions
- 1. Cut the brioche into small cubes.
- 2. Spread the cubes on a baking sheet.
- 3. Preheat the oven to 180 degrees (convection: 160 degrees, gas: level 2-3).
- 4. Toast the bread cubes in the oven for 10 minutes.
- 5. Place the toasted cubes in a bowl.
- 6. Let the cubes cool down.
- 7. Warm the milk.
- 8. Pour the warm milk over the bread cubes.
- 9. Knead the mixture well.
- 10. Let the mixture swell for 30 minutes.
- 11. Peel the 4 oranges.
- 12. Segment the fruit of the oranges.
- 13. Collect the juice while segmenting.
- 14. Squeeze the juice from the orange peels and remnants.
- 15. Squeeze the remaining oranges.
- 16. Put the orange juice in a pot.
- 17. Cut the dried fruits into cubes.
- 18. Add 50 g of powdered sugar to the pot.
- 19. Add the seeds from one vanilla pod to the pot.
- 20. Bring the mixture to a boil.
- 21. Let the compote simmer for 10 minutes.
- 22. Mix the starch with the liqueur.
- 23. Add the starch-liqueur mixture to the fruit.
- 24. Bring it to a boil once.
- 25. Fold in the orange segments.
- 26. Let the compote cool down.
- 27. Beat the butter until creamy.
- 28. Stir the remaining powdered sugar into the butter.
- 29. Stir the cinnamon into the butter.
- 30. Stir the eggs into the butter mixture one by one.
- 31. Stir the egg yolk into the butter mixture one by one.
- 32. Knead the bread cubes into the mixture.
- 33. Let the mixture swell for 15 minutes.
- 34. Moisten a kitchen towel.
- 35. Spread the mixture in the center of the towel.
- 36. Form the mixture into a 25 cm long roll.
- 37. Form the roll in the towel.
- 38. Tie the ends of the roll together with kitchen twine.
- 39. Fill a large oval casserole dish with boiling water.
- 40. Carefully place the roll into the water.
- 41. Let the roll cook at medium heat for 40 minutes.
- 42. Carefully remove the napkin dumplings from the towel.
- 43. Slice the dumplings.
- 44. Serve the dumplings together with the compote.
