🍽️ Classic Serviette Dumplings with Cheese Topping

Ingredients
- 800 g stale rolls
- 400 ml milk
- 2 shallots
- 2 tbsp butter
- 2 tbsp freshly chopped parsley
- 4 eggs
- salt
- pepper (from the mill)
- nutmeg
- 1 tbsp butter (for the cloth)
- butter (for the dish)
- 50 g freshly grated Alpine cheese
- 50 g freshly grated sheep's milk cheese
- 50 g freshly grated blue cheese
Instructions
- 1. Slice the bread rolls into thin pieces.
- 2. Bring the milk to a boil in a pot.
- 3. Pour the hot milk directly over the bread slices.
- 4. Let the mixture soak for about 10 minutes.
- 5. Peel the shallots and chop them very finely.
- 6. Sauté the shallots in hot butter until translucent.
- 7. Remove the pan from the heat.
- 8. Stir the chopped parsley into the shallot mixture.
- 9. Mix the shallot-parsley mixture with the eggs.
- 10. Fold the egg mixture into the soaked bread.
- 11. Check the consistency: The mixture must not be too wet and must be easy to shape.
- 12. Season the dough with salt, pepper, and ground nutmeg.
- 13. Take a clean linen or kitchen towel that has been boiled and wrung out thoroughly.
- 14. Brush the center of the towel thinly with butter.
- 15. Place the dumpling dough onto the buttered center of the towel.
- 16. Shape the dough into a long roll.
- 17. Wrap the roll tightly in the towel.
- 18. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 19. Boil the wrapped dumplings in salted water until cooked through.
- 20. Lift the dumplings carefully out of the water.
- 21. Let the dumplings drain briefly and rest.
- 22. Unwrap the towel and remove the dumplings.
- 23. Slice the dumplings into thick rounds.
- 24. Butter a baking dish.
- 25. Place the dumpling slices in the dish in an overlapping, shingle-like pattern.
- 26. Mix the cheese of your choice.
- 27. Distribute the cheese evenly over the dumpling slices.
- 28. Place the baking dish in the preheated oven.
- 29. Gratin the dumplings until the cheese is golden brown and bubbling.
- 30. Serve the finished dumplings with fresh green salad as desired.
