  5. 5. Peel the shallots and chop them very finely.
  6. 6. Sauté the shallots in hot butter until translucent.
  7. 7. Remove the pan from the heat.
  8. 8. Stir the chopped parsley into the shallot mixture.
  9. 9. Mix the shallot-parsley mixture with the eggs.
  10. 10. Fold the egg mixture into the soaked bread.
  11. 11. Check the consistency: The mixture must not be too wet and must be easy to shape.
  12. 12. Season the dough with salt, pepper, and ground nutmeg.
  13. 13. Take a clean linen or kitchen towel that has been boiled and wrung out thoroughly.
