🍽️ Mustard Cream Sauce

Ingredients
- 4 Schnitzel (veal or turkey)
- salt
- pepper
- 2 tbsp clarified butter
- 100 ml vegetable broth
- 200 g whipping cream
- 2 tbsp medium-hot mustard
- 2 tbsp light sauce thickener
- 1 tbsp lemon juice
- 1 pinch sugar
- 2 tbsp chopped dill (or tarragon)
Instructions
- 1. Season the cutlets with salt and pepper. Heat butter oil in a pan. Fry the cutlets on each side over medium heat: turkey for 3 to 4 minutes, veal for 1 minute. Remove the cutlets and keep them warm, covered, in the oven at 100 degrees Celsius.
- 2. Add vegetable broth (instant), cream, and mustard to the pan. Simmer the sauce gently for 5 minutes while stirring.
- 3. Season the sauce with lemon juice and sugar. Add 2 tablespoons of chopped dill or fresh tarragon leaves if desired.
