  1. 1. Season the cutlets with salt and pepper. Heat butter oil in a pan. Fry the cutlets on each side over medium heat: turkey for 3 to 4 minutes, veal for 1 minute. Remove the cutlets and keep them warm, covered, in the oven at 100 degrees Celsius.
  2. 2. Add vegetable broth (instant), cream, and mustard to the pan. Simmer the sauce gently for 5 minutes while stirring.
  3. 3. Season the sauce with lemon juice and sugar. Add 2 tablespoons of chopped dill or fresh tarragon leaves if desired.
