Ingredients
- 1 sour apple
- 2 onions
- 1 clove garlic
- 400 ml apple cider vinegar
- 1 bay leaf
- 1 tsp peppercorns
- 2 whole cloves
- 50 g yellow mustard flour
- 50 g brown mustard flour
- salt
Instructions
- 1. Peel the apple, the onions, and the garlic.
- 2. Remove the core from the apple.
- 3. Cut the fruit and vegetables into large chunks.
- 4. Place the pieces in a pot together with the vinegar, the bay leaf, the pepper, and the cloves.
- 5. Bring the mixture to a boil.
- 6. Reduce the heat and let the pot simmer gently for about 20 minutes with the lid on.
- 7. Put the yellow mustard powder and the brown mustard powder into a bowl.
- 8. Pour the liquid from the pot through a sieve into the bowl with the mustard powder.
- 9. Stir vigorously while doing so.
- 10. Continue stirring until the mustard has a creamy consistency.
- 11. Season the mustard with salt.
- 12. Let the mustard cool down.
- 13. Fill the mustard into jars that have been rinsed with hot water.
- 14. Seal the jars.
- 15. Let the mustard infuse for at least 2 days.
