  1. 1. Slice the stale bread rolls into thin pieces.
  2. 2. Place the slices into a large bowl.
  3. 3. Bring the milk to a boil in a pot.
  4. 4. Pour the hot milk directly over the bread slices.
  5. 5. Let the mixture soak for about 10 minutes.
  6. 6. Peel the shallot and dice it finely.
  7. 7. Melt the butter in a pan and sauté the shallots until translucent.
  8. 8. Finely chop the parsley and add it to the pan.
  9. 9. Season the mixture with salt, pepper, and nutmeg.
  10. 10. Let the onion and parsley mixture cool down briefly.
  11. 11. Add the eggs and the cooled onion mixture to the soaked bread.
  12. 12. Mix all ingredients thoroughly together.
  13. 13. If the dough is too wet, add some breadcrumbs.
  14. 14. If the dough is too dry, add a little more milk.
  15. 15. Wet your hands with water.
  16. 16. Shape the mixture into 8 to 10 round dumplings.
  17. 17. Bring a large pot of salted water to a boil.
  18. 18. Carefully place the dumplings into the boiling water.
  19. 19. Simmer the dumplings gently for about 20 minutes.
  20. 20. Lift the cooked dumplings out of the water with a slotted spoon.
  21. 21. Serve the bread dumplings hot.
