Ingredients
- 6 stale rolls
- 200 ml milk
- 1 shallot
- 0.5 bunch parsley
- 1 tbsp butter
- 2 eggs
- salt
- pepper
- nutmeg
Instructions
- 1. Warm the milk in a pot over medium heat. Slice the bread rolls into thin pieces and place them in a bowl. Pour the warm milk over them and let the mixture soak for about 30 minutes. Peel the shallot and chop it finely.
- 2. Pluck the parsley leaves from the stems and chop them finely. Mix half of the parsley with the chopped shallot into the soaked bread slices. Stir everything well. Add the egg and knead a loose dough. Season with salt, pepper, and nutmeg.
- 3. With wet hands, shape four small dumplings. Place them in boiling salted water and cook over medium heat for 10 to 15 minutes (do not boil). Remove them and serve warm.
