  1. 1. Whip the cream until stiff and place it in the refrigerator.
  2. 2. Separate the eggs. Put the egg whites in a large bowl and keep them cold.
  3. 3. Put the egg yolks in a separate mixing bowl.
  4. 4. Cut the vanilla pod lengthwise and scrape out the seeds.
  5. 5. Add the vanilla seeds and the powdered sugar to the egg yolks.
  6. 6. Whisk the mixture over a pot of hot water with a whisk until thick and foamy.
  7. 7. Place the bowl in ice water and continue stirring to cool the mixture down quickly.
  8. 8. Gently fold the cold whipped cream into the cooled egg cream.
  9. 9. Whip the egg whites with the lemon juice until stiff.
  10. 10. Gently fold the egg whites into the ice cream mixture.
  11. 11. Fill the mixture into a shallow metal bowl.
  12. 12. Cover the bowl and let it freeze completely for at least 6 hours.
  13. 13. Take the ice cream out of the freezer about 10 minutes before serving.
  14. 14. Remove the mixture from the mold and fill it into glasses.
  15. 15. Serve the dessert with a dollop of whipped cream, pistachios, and cinnamon as decoration.
