🍽️ Creamy Celery Soup with Pancake Spirals

Ingredients
- 1 large celeriac (peeled and cut into small cubes)
- 1 l vegetable broth (instant)
- 250 ml whipping cream
- pepper (from the mill)
- salt
- 250 ml milk
- 2 eggs
- 7 tbsp flour
- 0.5 tsp salt
- 4 tbsp chive rings
- butter (for the pancakes)
Instructions
- 1. Place the celery in a pot.
- 2. Pour the vegetable broth over it.
- 3. Cook the celery until it is very soft.
- 4. Stir in the cream.
- 5. Bring the mixture to a brief boil.
- 6. Blend the soup until smooth.
- 7. Season the soup with salt and pepper.
- 8. Mix milk, eggs, flour, 2 tablespoons of sliced chives, and salt.
- 9. Stir the ingredients into a smooth batter.
- 10. Heat some fat in a pan.
- 11. Bake 12 thin pancakes.
- 12. Flip the pancakes with a spatula.
- 13. Cook the pancakes golden brown on both sides.
- 14. Roll up the finished pancakes.
- 15. Cut the pancakes into thin strips.
- 16. Serve the celery soup in soup plates.
- 17. Garnish the soup with the pancake strips.
- 18. Garnish the soup with fresh chive rings.
- 19. Serve the soup immediately while warm.
