🍽️ Crispy Celery Sticks with Parmesan and Lime Dip

Ingredients
- 1 kg celery stalks
- salt
- 2 eggs
- pepper (from the mill)
- 80 g breadcrumbs
- 2 tbsp freshly grated parmesan
- oil (for frying)
- 100 g cream cheese
- 2 tbsp mayonnaise
- 1 unpeeled lime
- cayenne pepper
Instructions
- 1. Wash the celery thoroughly and remove the tough fibers.
- 2. Cut the celery into sticks about 5 centimeters long.
- 3. Briefly cook the sticks in salted water (this is called blanching).
- 4. Remove the sticks from the water and place them in cold water to stop the cooking process.
- 5. Pat the celery sticks completely dry with a kitchen towel.
- 6. Stir the cream cheese and mayonnaise in a bowl until smooth.
- 7. Squeeze the juice of a lime.
- 8. Grate a little fine zest from the lime.
- 9. Add the lime juice and zest to the cheese mixture.
- 10. Season the dip with salt and cayenne pepper to taste.
- 11. Whisk the eggs with a pinch of salt and pepper.
- 12. Coat the dry celery sticks in the egg mixture.
- 13. Mix the breadcrumbs with the grated Parmesan.
- 14. Roll the egg-coated sticks in the breadcrumb mixture.
- 15. Heat the oil in a pan to 170 degrees Celsius.
- 16. Fry the breaded sticks in batches until golden brown.
- 17. Let them cook in the hot oil for about 2 to 3 minutes.
- 18. Place the finished sticks on kitchen paper to absorb excess oil.
- 19. Serve the warm celery sticks together with the lime dip.
