🍽️ Creamy Celery Sauce

Ingredients
- 0.5 celeriac
- 2 shallots (roughly chopped)
- 300 ml milk
- 2 garlic cloves
- 1 bay leaf
- 1 pinch grated nutmeg
- 50 g fresh breadcrumbs
- 50 g unsalted butter
- 4 tbsp heavy cream
- salt
- ground black pepper
Instructions
- 1. Peel the celery and cut the vegetable into small cubes.
- 2. Peel the shallots and chop them very finely.
- 3. Add the celery, shallots, milk, herbs, and spices to a pot.
- 4. Let the mixture simmer for 10 minutes.
- 5. Remove the bay leaf from the pot.
- 6. Add the breadcrumbs and continue cooking until the celery is soft.
- 7. Puree the entire mixture with a hand blender.
- 8. Press the puree through a fine sieve to make it completely smooth.
- 9. Season the sauce with grated nutmeg.
- 10. Stir in the butter pieces until they have melted.
- 11. Refine the sauce with cream, salt, and pepper to your taste.
- 12. Fill the sauce into small bowls.
- 13. Sprinkle the sauce with chopped celery greens and serve.
