  1. 1. Peel the celery and cut the vegetable into small cubes.
  2. 2. Peel the shallots and chop them very finely.
  3. 3. Add the celery, shallots, milk, herbs, and spices to a pot.
  4. 4. Let the mixture simmer for 10 minutes.
  5. 5. Remove the bay leaf from the pot.
  6. 6. Add the breadcrumbs and continue cooking until the celery is soft.
  7. 7. Puree the entire mixture with a hand blender.
  8. 8. Press the puree through a fine sieve to make it completely smooth.
  9. 9. Season the sauce with grated nutmeg.
  10. 10. Stir in the butter pieces until they have melted.
  11. 11. Refine the sauce with cream, salt, and pepper to your taste.
  12. 12. Fill the sauce into small bowls.
  13. 13. Sprinkle the sauce with chopped celery greens and serve.
