🍽️ Breaded Celery Cutlets with Creamy Sauce

Ingredients
- 2 large celeriac
- salt
- pepper (from the mill)
- 100 g flour
- 1 egg
- 150 g breadcrumbs
- 1 tbsp butter
- 150 g cream cheese (plain)
- 80 ml whipping cream
- 2 tbsp freshly chopped parsley
- 4 lemon wedges
Instructions
- 1. Peel the celery bulbs completely.
- 2. Cut the celery into 1 cm thick slices.
- 3. Cut half of the slices into strips that are 1 cm wide and 5 cm long.
- 4. Bring water with salt to a boil.
- 5. Cook the celery slices in the boiling water for 1 to 2 minutes.
- 6. Remove the slices from the water.
- 7. Cool the slices immediately under cold water.
- 8. Pat the slices dry with a kitchen towel.
- 9. Cook the celery strips in the boiling salted water for 2 to 3 minutes.
- 10. Remove the strips from the water.
- 11. Let the strips drain well.
- 12. Season the celery slices with pepper.
- 13. Coat the slices first in flour.
- 14. Then coat the slices in beaten egg.
- 15. Finally coat the slices in breadcrumbs.
- 16. Press the breading firmly onto the slices.
- 17. Heat oil in a pan.
- 18. Fry the cutlets in the hot pan.
- 19. Fry them until golden brown on both sides.
- 20. Melt butter in a pot.
- 21. Sweat the celery pieces in the butter.
- 22. Stir the fish cheese into the butter.
- 23. Stir in the cream.
- 24. Season the sauce with salt and pepper.
- 25. Fold in the parsley.
- 26. Simmer the sauce for 2 minutes over medium heat.
- 27. Distribute the celery pieces onto deep plates.
- 28. Place the breaded cutlets on top.
- 29. Garnish the dish with lemon wedges as desired.
- 30. Serve the dish warm.
