🍽️ Classic Celery Slices in Creamy Vegetable Sauce

Ingredients
- 4 small celeriac
- 0.125 l olive oil
- 12 small shallots (peeled)
- 2 carrots (diced)
- 2 potatoes (diced)
- 100 g green peas
- 2 tsp sugar
- 2 tbsp dill (chopped)
- salt
- black pepper
- 1 tbsp flour
- lemon wedge
- dill fronds (for garnish)
Instructions
- 1. Peel the celery thoroughly.
- 2. Cut the celery into slices about 1.5 centimeters thick.
- 3. Bring a pot of water to a boil.
- 4. Add the celery slices to the boiling water.
- 5. Cook the celery for about 15 minutes until tender.
- 6. Drain the celery.
- 7. Set the cooked celery slices aside.
- 8. Heat olive oil in a large pot.
- 9. Finely chop the shallots and add them to the hot oil.
- 10. Sauté the shallots until translucent.
- 11. Peel the carrots and cut them into small pieces.
- 12. Peel the potatoes and cut them into small pieces.
- 13. Add the carrots, potatoes, and green peas to the pot.
- 14. Pour 1 liter of water into the pot.
- 15. Bring the mixture to a boil.
- 16. Season the sauce with salt and pepper to taste.
- 17. Whisk the flour with 2 tablespoons of cold water to form a smooth paste.
- 18. Stir the flour paste into the vegetables.
- 19. Let the sauce simmer for 10 minutes.
- 20. Add the prepared celery slices to the sauce.
- 21. Heat the celery in the sauce until warm.
- 22. Finely chop the dill and stir it into the sauce.
- 23. Taste the sauce one last time and adjust seasoning if needed.
- 24. Plate the celery slices with the vegetable sauce.
- 25. Garnish the dish with a lemon wedge, fresh parsley leaves, and dill tips.
