  1. 1. Peel the celeriac completely, removing the tough outer skin.
  2. 2. Cut the celeriac in half through the center.
  3. 3. Cut each half into eight equal wedges.
  4. 4. Slice the wedges into very thin strips or slices.
  5. 5. Place the cut celery pieces into a pot.
  6. 6. Add a small splash of water, some lemon juice, one teaspoon of sugar, and a pinch of salt to the celery.
  7. 7. Cook the celery over medium heat until it is soft.
  8. 8. Wait until the liquid in the pot has almost completely evaporated.
  9. 9. Remove the pot from the heat.
  10. 10. Add a little more sugar, black pepper, vinegar, and oil to the celery.
  11. 11. Stir the salad vigorously to distribute the dressing evenly.
  12. 12. Let the salad marinate in the refrigerator for one to two hours.
  13. 13. This allows the flavors to meld together well.
