  2. 2. Wash the stalks thoroughly under running water.
  3. 3. Separate the green leaves from the stalks and set them aside.
  4. 4. Slice the celery stalks into rounds about finger-thick.
  5. 5. Heat one tablespoon of butter in a pan.
  6. 6. Add the celery pieces to the hot butter.
  7. 7. Sauté the celery for about 8 minutes.
  8. 8. Take a separate small frying pan or skillet.
  9. 9. Add the pine nuts to the dry pan.
  10. 10. Toast the nuts until they are fragrant.
  11. 11. Finely chop some of the green celery leaves.
  12. 12. Whisk the eggs in a bowl.
  13. 13. Add a little water, salt, and pepper to the eggs.
  14. 14. Fold the chopped celery leaves into the egg mixture.
  15. 15. Add a little fresh butter to the pan with the celery.
  16. 16. Pour the egg mixture into the pan.
  17. 17. Place the lid on the pan.
  18. 18. Cook the omelet over medium heat.
  19. 19. Wait until the surface of the omelet is set.
  20. 20. Carefully flip the omelet using a large plate.
  21. 21. Cook the other side briefly.
  22. 22. Flip the omelet back into the pan.
  23. 23. Sprinkle the finished omelet with the toasted pine nuts.
