🍽️ Crispy Celery Egg Omelet with Pine Nuts

Ingredients
- 1 stalk celery
- 2 tbsp butter
- 4 tbsp pine nuts
- 6 eggs
- 5 tbsp water
- salt
- pepper (from the mill)
Instructions
- 1. Separate the celery into individual stalks.
- 2. Wash the stalks thoroughly under running water.
- 3. Separate the green leaves from the stalks and set them aside.
- 4. Slice the celery stalks into rounds about finger-thick.
- 5. Heat one tablespoon of butter in a pan.
- 6. Add the celery pieces to the hot butter.
- 7. Sauté the celery for about 8 minutes.
- 8. Take a separate small frying pan or skillet.
- 9. Add the pine nuts to the dry pan.
- 10. Toast the nuts until they are fragrant.
- 11. Finely chop some of the green celery leaves.
- 12. Whisk the eggs in a bowl.
- 13. Add a little water, salt, and pepper to the eggs.
- 14. Fold the chopped celery leaves into the egg mixture.
- 15. Add a little fresh butter to the pan with the celery.
- 16. Pour the egg mixture into the pan.
- 17. Place the lid on the pan.
- 18. Cook the omelet over medium heat.
- 19. Wait until the surface of the omelet is set.
- 20. Carefully flip the omelet using a large plate.
- 21. Cook the other side briefly.
- 22. Flip the omelet back into the pan.
- 23. Sprinkle the finished omelet with the toasted pine nuts.
- 24. Serve the dish immediately.
