🍽️ Stewed Celery with Pumpkin

Ingredients
- 400 g celeriac
- 300 g pumpkin
- 2 red onions
- 200 g snow peas
- 2 tbsp vegetable oil
- 200 ml vegetable broth
- salt
- pepper (from the mill)
- nutmeg
- 1 bunch chives
- 250 g sour cream
Instructions
- 1. Wash the celery thoroughly.
- 2. Remove the tough outer layer from the celery.
- 3. Cut the celery into pieces about 3 centimeters long.
- 4. Peel the pumpkin.
- 5. Remove the inside of the pumpkin.
- 6. Cut the pumpkin into 1-centimeter cubes.
- 7. Peel the onions.
- 8. Slice the onions into strips.
- 9. Wash the flat green beans.
- 10. Trim the ends of the flat green beans.
- 11. Cut the flat green beans diagonally in half.
- 12. Heat oil in a large pan.
- 13. Add the prepared vegetables to the hot pan.
- 14. Sauté the vegetables, turning frequently, for 2 minutes.
- 15. Deglaze the vegetables with the vegetable broth.
- 16. Let the vegetables simmer over medium heat for 5 to 7 minutes.
- 17. Season the dish with salt.
- 18. Season the dish with pepper.
- 19. Season the dish with ground nutmeg.
- 20. Wash the chives.
- 21. Shake the chives dry.
- 22. Cut the chives in half lengthwise.
- 23. Stir the sour cream into the vegetables.
- 24. Let the vegetables with the sour cream warm through briefly.
- 25. Serve the dish on pre-warmed plates.
- 26. Garnish the dish with the fresh chives.
