🍽️ Creamy Celery Soup with Spicy Cheese

Ingredients
- 200 g sweet potatoes
- 2 onions
- 400 g celery stalks
- 2 tbsp butter
- 800 ml broth
- salt
- pepper (from the mill)
- 100 g blue cheese
- 2 tbsp chive rings
Instructions
- 1. Peel the potatoes and the onions.
- 2. Cut the potatoes and onions into small cubes.
- 3. Wash the celery thoroughly.
- 4. Remove the tough stems and leaves from the celery.
- 5. Cut the celery into small cubes as well.
- 6. Heat a pot on the stove.
- 7. Add the butter to the pot and let it melt.
- 8. Add the onions to the melted butter.
- 9. Sauté the onions until they are soft and translucent.
- 10. Add the diced potatoes and celery to the pot.
- 11. Sauté the vegetables briefly.
- 12. Pour the vegetable broth over the vegetables.
- 13. Season the soup with salt.
- 14. Season the soup with black pepper.
- 15. Set the stove to medium heat.
- 16. Let the soup simmer for about 25 minutes.
- 17. Remove the rind from the cheese.
- 18. Cut the cheese into small cubes.
- 19. Gently mash the cheese with a fork.
- 20. Taste the soup and adjust seasoning if needed.
- 21. Stir the prepared cheese into the hot soup.
- 22. Warm the serving bowls.
- 23. Distribute the soup onto the pre-warmed bowls.
- 24. Cut fresh chives into small rings.
- 25. Sprinkle the finished soup with the chives.
- 26. Serve the soup immediately.
