  1. 1. Wash the celery thoroughly under running water.
  2. 2. Remove the tough strings from the stalks.
  3. 3. Split the wide stalks in half lengthwise.
  4. 4. Cut all the stalks into pieces about 5 to 6 centimeters long.
  5. 5. Place the sticks in a bowl of cold water.
  6. 6. Let them sit there until you need them (for a maximum of 2 hours).
  7. 7. Clean the spring onions and wash them.
  8. 8. Slice the spring onions into fine rings.
  9. 9. Drain the tuna fish and the capers in a sieve.
  10. 10. Add the tuna, the capers, and the spring onions to a bowl.
  11. 11. Squeeze the lemon to get the juice.
  12. 12. Stir cream cheese, yogurt, and one tablespoon of lemon juice in a small bowl.
  13. 13. Season the cream with salt and pepper to taste.
  14. 14. Gently fold the cream cheese cream into the tuna mixture.
  15. 15. Taste the dip cream again and adjust the spices.
  16. 16. Sprinkle the cream with pink peppercorns for decoration.
  17. 17. Take the celery sticks out of the water.
  18. 18. Pat them dry well with a kitchen towel.
  19. 19. Serve the dry sticks together with the tuna cream for dipping.
