🍽️ Celery and Pumpkin Vegetable Mix

Ingredients
- 400 g celeriac
- 300 g pumpkin
- 2 red onions
- 200 g flat beans
- 200 ml vegetable broth
- salt
- pepper (from the mill)
- 1 bunch chives
- 100 g sour cream
Instructions
- 1. Wash the celery thoroughly and peel it. Cut the vegetable into approx. 1.5 cm cubes.
- 2. Peel the pumpkin and remove the inside. Cut the flesh into approx. 2 cm cubes.
- 3. Peel the onions and cut them into thin strips.
- 4. Wash the flat beans (snap peas) and remove the ends. Cut them diagonally in half.
- 5. Put the vegetable broth in a pot and bring it to a boil.
- 6. Add the onions and celery cubes to the boiling broth. Let them simmer for 2 minutes.
- 7. Stir in the pumpkin cubes and cook for another 1 minute.
- 8. Add the halved flat beans and cook everything for 3 minutes until the vegetables are tender.
- 9. Season the vegetables with salt and pepper to taste.
- 10. Wash the chives and shake them dry. Cut them into small rings.
- 11. Serve the warm vegetables, garnished with the chives and a dollop of sour cream.
