  1. 1. Wash the celery thoroughly and peel it. Cut the vegetable into approx. 1.5 cm cubes.
  2. 2. Peel the pumpkin and remove the inside. Cut the flesh into approx. 2 cm cubes.
  3. 3. Peel the onions and cut them into thin strips.
  4. 4. Wash the flat beans (snap peas) and remove the ends. Cut them diagonally in half.
  5. 5. Put the vegetable broth in a pot and bring it to a boil.
  6. 6. Add the onions and celery cubes to the boiling broth. Let them simmer for 2 minutes.
  7. 7. Stir in the pumpkin cubes and cook for another 1 minute.
  8. 8. Add the halved flat beans and cook everything for 3 minutes until the vegetables are tender.
  9. 9. Season the vegetables with salt and pepper to taste.
  10. 10. Wash the chives and shake them dry. Cut them into small rings.
  11. 11. Serve the warm vegetables, garnished with the chives and a dollop of sour cream.
