🍕 Celery-Apple Pizza

Ingredients
- 350 g Quark
- 100 ml Milk (1.5% fat)
- 5 tbsp Olive oil
- Salt
- 300 g Whole wheat flour
- 3 tsp Baking powder
- 250 g small Apples (2 small Apples)
- 160 g Celery (2 stalks)
- 5 tbsp Grainy mustard
- 100 g Emmental
- 120 g Turkey ham (in thin slices)
- 0.5 bunch Chives
Instructions
- 1. Whisk quark, milk, oil, and salt in a bowl.
- 2. Mix flour and baking powder.
- 3. Add the flour mixture to the quark-oil mixture.
- 4. Knead everything with the dough hooks of the hand mixer until smooth.
- 5. Wash the apples and dry them.
- 6. Quarter the apples and remove the core.
- 7. Slice the apple flesh into thin slices.
- 8. Clean and wash the celery.
- 9. Slice the celery into thin slices as well.
- 10. Fry the celery slices in the remaining oil for about 2 minutes.
- 11. Add the apple slices and fry them briefly.
- 12. Let the vegetable-fruit mixture cool down slightly.
- 13. Whisk the remaining quark with the mustard.
- 14. Season the quark cream with salt.
- 15. Grate the cheese.
- 16. Divide the dough on a floured work surface into 4 portions.
- 17. Roll each portion into an oblong flatbread (approx. 25x15 cm).
- 18. Place 2 pizza flatbreads each on a sheet of baking paper the size of the baking tray.
- 19. Pull the baking paper sheet with the pizzas onto the tray.
- 20. Spread the quark cream over the pizzas.
- 21. Distribute the celery-apple mixture on top.
- 22. Place ham slices on top.
- 23. Halve the ham slices if necessary.
- 24. Sprinkle the grated cheese over the pizzas.
- 25. Preheat the oven to 225 °C (convection: 200 °C, gas: level 3-4).
- 26. Bake the pizzas on the lowest rack for 15-20 minutes.
- 27. Wash the chives in the meantime.
- 28. Shake the chives dry.
- 29. Cut the chives into small rings.
- 30. Take the baked pizzas out of the oven.
- 31. Pull the pizzas off the tray along with the baking paper.
- 32. Place the baking paper sheet with the remaining pizzas on the tray.
- 33. Top the remaining pizzas like the first two.
- 34. Bake the remaining pizzas as well.
- 35. Sprinkle all pizzas with the chive rings.
