🍽️ Homemade Harissa

Ingredients
- 50 g red chili peppers (dried)
- 3 garlic cloves
- 2 tsp cumin seeds
- 2 tsp coriander seeds
- 1 tbsp salt
- 150 g tomato paste
- 80 ml olive oil
- olive oil (to cover)
Instructions
- 1. Wash the chili peppers thoroughly. Cut them lengthwise, remove the seeds, and place them in a bowl. Pour 150 milliliters of boiling water over them and let them soak for 15 minutes.
- 2. Peel the garlic cloves and chop them finely. Grind the cumin and coriander in a mortar until you have a fine powder.
- 3. Add the soaked chili peppers along with the soaking water, the chopped garlic, the ground spice mix, the salt, the tomato paste, and one tablespoon of oil to a blender. Puree everything until smooth.
- 4. Now add enough oil until the paste has a firm consistency. Fill the harissa into a clean, sealable jar and cover it with a thin layer of oil to preserve it.
