  1. 1. Wash the chili peppers thoroughly. Cut them lengthwise, remove the seeds, and place them in a bowl. Pour 150 milliliters of boiling water over them and let them soak for 15 minutes.
  2. 2. Peel the garlic cloves and chop them finely. Grind the cumin and coriander in a mortar until you have a fine powder.
  3. 3. Add the soaked chili peppers along with the soaking water, the chopped garlic, the ground spice mix, the salt, the tomato paste, and one tablespoon of oil to a blender. Puree everything until smooth.
  4. 4. Now add enough oil until the paste has a firm consistency. Fill the harissa into a clean, sealable jar and cover it with a thin layer of oil to preserve it.
