  1. 1. Put the flour, sugar, and salt into a large bowl.
  2. 2. Make a small well in the center of the flour mixture.
  3. 3. Crumble the yeast into this well.
  4. 4. Take a small sip of lukewarm milk and mix it with the yeast.
  5. 5. Cover the bowl with a cloth and let the yeast mixture rest for 20 minutes.
  6. 6. Then stir in about 200 milliliters of lukewarm water and the remaining milk.
  7. 7. Knead the dough until smooth on a lightly floured surface.
  8. 8. Place the dough back into the bowl.
  9. 9. Cover the bowl and place it in the refrigerator for 20 minutes.
  10. 10. Take the dough out of the fridge and knead it briefly.
  11. 11. Roll the dough out into a rectangle about 20 by 40 centimeters.
  12. 12. Place the cold butter between two sheets of baking paper.
  13. 13. Roll the butter with a rolling pin into a square about 20 centimeters on each side.
  14. 14. Place the butter square in the center of the dough rectangle.
  15. 15. Fold the two short sides of the dough (the 20-centimeter sides) over the butter.
  16. 16. Roll the dough and butter together.
  17. 17. Dust the dough lightly with flour if it sticks.
  18. 18. Fold the bottom third of the dough to the center.
  19. 19. Fold the top third over it to form a narrow rectangle.
  20. 20. Rotate the dough package by 90 degrees.

  22. 22. Prepare a template measuring 20 by 20 by 15 centimeters.

  32. 32. Brush the croissants with the egg.
  33. 33. Bake the croissants in the hot oven for about 15 minutes until golden brown.
