Ingredients
- 500 g flour
- 50 g sugar
- 1 tsp salt
- 20 g fresh yeast
- 100 ml lukewarm milk
- flour (for working)
- 250 g butter
- 1 egg
Instructions
- 1. Put the flour, sugar, and salt into a large bowl.
- 2. Make a small well in the center of the flour mixture.
- 3. Crumble the yeast into this well.
- 4. Take a small sip of lukewarm milk and mix it with the yeast.
- 5. Cover the bowl with a cloth and let the yeast mixture rest for 20 minutes.
- 6. Then stir in about 200 milliliters of lukewarm water and the remaining milk.
- 7. Knead the dough until smooth on a lightly floured surface.
- 8. Place the dough back into the bowl.
- 9. Cover the bowl and place it in the refrigerator for 20 minutes.
- 10. Take the dough out of the fridge and knead it briefly.
- 11. Roll the dough out into a rectangle about 20 by 40 centimeters.
- 12. Place the cold butter between two sheets of baking paper.
- 13. Roll the butter with a rolling pin into a square about 20 centimeters on each side.
- 14. Place the butter square in the center of the dough rectangle.
- 15. Fold the two short sides of the dough (the 20-centimeter sides) over the butter.
- 16. Roll the dough and butter together.
- 17. Dust the dough lightly with flour if it sticks.
- 18. Fold the bottom third of the dough to the center.
- 19. Fold the top third over it to form a narrow rectangle.
- 20. Rotate the dough package by 90 degrees.
- 21. Roll the dough out again.
- 22. Prepare a template measuring 20 by 20 by 15 centimeters.
- 23. Roll the dough on a floured surface to about 40 by 40 centimeters.
- 24. Cut the dough in half.
- 25. Place the template on the dough halves.
- 26. Cut triangles out of the dough.
- 27. Roll the triangles starting from the wide side.
- 28. Place the croissants on a baking sheet lined with baking paper.
- 29. Cover the croissants and let them rise for 40 minutes.
- 30. Preheat the oven to 200 degrees Celsius with fan setting.
- 31. Beat an egg.
- 32. Brush the croissants with the egg.
- 33. Bake the croissants in the hot oven for about 15 minutes until golden brown.
