🍽️ Crunchy Homemade Rolls for Gifting

Ingredients
- 250 g Wheat flour
- 200 g Rye groats
- 150 g Dry sourdough
- 1 cube fresh yeast
- 1 tbsp Salt
- Olive oil
- Flour (for working)
- Seeds to taste (e.g. flax seeds, sesame seeds)
Instructions
- 1. Put flour, cracked grain, and dried sourdough starter into a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Mix the yeast with two tablespoons of lukewarm water.
- 5. Let the yeast mixture rise for about 30 minutes, covered.
- 6. Add about 250 milliliters of lukewarm water and salt to the bowl.
- 7. Knead everything into a smooth dough.
- 8. Adjust the amount of water if necessary.
- 9. Let the dough rise for another 30 minutes, covered.
- 10. Preheat the oven to 240 degrees Celsius.
- 11. Brush a baking tray with oil.
- 12. Shape the dough into a roll on a floured surface.
- 13. Divide the roll into 12 equal pieces.
- 14. Shape each piece into small rolls.
- 15. Place the rolls on the prepared tray.
- 16. Let the rolls rise for another 15 minutes.
- 17. Brush the rolls with water.
- 18. Sprinkle them with seeds if desired.
- 19. Place a small bowl of water in the oven.
- 20. Bake the rolls for 10 minutes at 240 degrees Celsius.
- 21. Reduce the oven temperature to 180 degrees Celsius.
- 22. Brush the rolls with water again.
- 23. Finish baking them for another 20 to 25 minutes.
- 24. Remove the rolls from the tray.
- 25. Let them cool completely.
- 26. Tie labeled paper tags around the rolls.
- 27. Package them as a gift.
